Resumo
The world’s current environmental and food crises have brought legumes into the spotlight. The environmental advantages within existing agri-food systems, characterized by a massive production of animal-based foods, have long been advocated since legumes represent more eco-friendly protein food sources. Also, scientific evidence has been highlighting their potential as healthful foods, declaring them essential in any health-promoting dietary pattern, considering for instance their positive impact on blood lipid profile and glycemia management. Indeed, evidence shows legume intake is able to increase the overall nutritional value of a diet and ultimately, legume-rich diets help prevent the onset of major present-day morbidities, such as cardiovascular diseases. More recently, their ability to provide added-value functional ingredients has also caught the attention from both the academic field and food industry sectors. Growing bodies of evidence begin supporting the preservation of their biologic activity, either when processed (e.g., flours) or incorporated within food matrices (e.g., bakery products), making them promising candidates for developing functional foods. In light of such data, a human food intervention has been running at ESB-UCP, exploring the use of NMR-based metabolomics of biologic fluids (e.g., urine), combined with nutritional status and gut microbiota evaluations, to further understand the benefits of legumes.
